Spaghett, a neighborhood craft pasta and cocktail house, opened its doors July 11, in the heart of Charlotte’s historic Fourth Ward. The newest venture from Irreverently Refined Hospitality, led by James Beard Award finalist and Founder Sam Hart, Executive Chef Kendall Moore, and Beverage Director Amanda Britton, showcases Carolinian cuisine through an Italian lens in an approachable, yet elevated dining atmosphere.

“Returning to my hometown and being able to bring a new dining experience to the community is a career milestone,” said Executive Chef Kendall Moore. “I’ve always been passionate about supporting our local farmers, to the point of considering a potential career in farming, and now through Spaghett, we’re able to help Charlotteans fall in love with the produce and ingredients that we have in our backyard.”

The Menu

For Executive Chef Kendall Moore, a Charlotte native, his vision in creating the menu was one with a clear focus — celebrating the bounty of the region. Spaghett’s menu focuses on ingredient-driven dishes directed by the many regional micro seasons of the Carolinas. Assorted into Primi, Pasta, Entrata, and Dolce, Spaghett’s menu offers an innovative interpretation of Italian classics, utilizing an ever-evolving rotation of seasonal produce in dishes like Bucatini with Summer Squash, Basil, and Pangrattato, and Potato Scarpinocc featuring Corn Passata, Sorghum Glaze, Yarrow, and Lindale Cheese. Menu items like NC Fish Crudo with Melons, Tomato, Green Coriander, GA Sunflower Oil, and Breaded Mangalista Pork served with Salsa Verde and Carolina Gold Rice further demonstrate Chef Moore’s focus on Carolinian ingredients sourced from local farms and purveyors.

Spaghett’s beverage program, led by award-winning Beverage Director Amanda Britton, showcases a thoughtful selection of reimagined classics, with a range of cocktails like Big Dom with Southern Star Bourbon, Strega, Thyme, Grapefruit, and Lemon, and Annette Funicello with 400 Conejos Mezcal, Cappelletti Passion Fruit, and Fennel, alongside a variety of beer, wine, and N/A offerings. The ‘s cocktail namesake, Spaghett (Miller High Life, Aperol, Citrus), serves as a cornerstone of the menu— the iconic drink Britton served Chef Sam Hart years ago for the very first time. Guests can also expect to see several Carolina-based spirits on the beverage menu, further cementing Spaghett’s commitment to celebrating the abundance of talent in the region.

“When I first read about the Spaghett cocktail many years ago, I was immediately hooked and made it my mission to share this delicious drink with as many people as possible,” said Beverage Director Amanda Britton. “The cocktail itself is a strong representation of what we’re trying to do here at Spaghett — a carefully curated, flavorful mashup of Italian and American staples. I’m excited to introduce guests to unexpected cocktails through familiar spirits and ingredients.”

The Space

Residing in the historic 19th century Young-Morrison House, Spaghett demonstrates thoughtful preservation of history that is seamlessly integrated with original design elements. Inside, the space is adorned with vibrant green paint, floral wallpaper, and an array of original local artwork, weaving a renewed brightness into the historic space while staying true to the building’s roots. Spaghett boasts three dining rooms, seating 44 total in addition to the intimate, six-seat bar space and a forthcoming outdoor patio for al fresco dining.

“Spaghett has been a labor of love years in the making, now made possible by the collaboration and creative direction of both Kendall and Amanda, and I’m thrilled to finally see it come to life,” said Irreverently Refined Hospitality Founder Sam Hart. “By making Spaghett an accessible neighborhood restaurant, we are creating a new opportunity for those in the historic Fourth Ward and beyond to experience the high-quality dishes and unparalleled service that Irreverently Refined Hospitality is known for.”
